Honey Mustard and the World’s Largest Ball of Paint

So we are back to school here in the Indiana.  For the couple of days before going back to school, we decided to do something fun and offbeat.  So what a better way to spend the day than going to see one of central Indiana’s bizarre roadside attractions?  Just about an hour away from our house is:IMG_2770I know, I was amazed too.

This is 100% legit.  The ball of paint weighs over 5,500 pounds.  Not only is it free to visit, it’s also free to paint!  We called up and set up a time to come a paint (appointments are necessary due to paint drying times) and headed up to Anderson, deciding to stay the night at a hotel so the kids could play in the pool.  The next morning, we made the short trip to Alexandria, met Mike and Glenda Carmichael (yep, Michael Carmichael… you cannot make this up), and added to a world record!  It was quirky little fun way to spend the last couple of days before going back to school. And we each got a certificate stating which layer of paint we added to the world record (layer #25,647, by the way).

That night, we had something for dinner that Reese and Lennox couldn’t have.  I felt bad that we were having yummy Thai chicken stir-fry and they were having chicken nuggets, so I set out to make them some special nugget dip.  I love it when those kinds of experiments turn out right the first time.

I hate honey mustard as a salad dressing, but love it as a dip for chicken and fries.  So I decided it was time to try making some.  Typically, honey mustard recipes call for dijon mustard, which I never have on hand.  I just go for regular, American yellow mustard, and it turns out just the way I want it.

Mix together mustard, honey, vegan mayo (soy-free in our house), and some black pepper.  That’s it.  So simple!  It’s a great way to use homemade Super Easy Vegan (aquafaba) Mayonnaise (but you can use whatever vegan mayo you have – or even regular mayo if you don’t have an egg allergy).  It’s a great addition dip for Dairy-free, Egg-free Chicken Nuggets or fries or anything else needs a dip.

Egg-free Honey Mustard Dip

  • 1/2 cup vegan mayo
  • 2 Tbsp mustard
  • 1 Tbsp honey
  • 1/8 tsp ground black pepper

Mix all ingredients together in a bowl.  The honey mustard dip can be served right away, but the flavor will improve if allowed to sit in the fridge for a while. Store in a covered container
